Ingredients A

  • 4 Dried Chillies & 4 fresh red chillies - seeded and cut
  • 5-6 small shallots
  • 1 big onion
  • 3 cloves garlic 3
  • stalks lemon grass cut into slices
  • 2-3 cm of fresh galangal (lengkuas)- diced
  • 1 candlenuts
  • 3 cm of fresh tumeric - sliced

Ingredients B

  • 1 big cucumber - remove seeded centre
  • 1 big carrot
  • 2 stalks long beans
  • 3-4 leaves of white cabbage
  • one quarter pineapple (other vegetables you may add include: cauliflower, french beans)
  • 50g peanuts - toased and grounded coarsely
  • 4-5 tablespoon of rice vinegar or apple sider vinagar
  • 10g sesame seeds - toasted (optional)
  • 1 tablespoon of tamarind paste
  • salt and sugar to taste

Preparation of vegetables

Blend all ingredents A together until fine and put this chilli paste aside.

Cut the long beans, carrot into 3cm length and width about half cm for carrot. Cut cabbage into medium (2cm) pieces. Cut away core of pineapple and cut into small pieces.

Cut cucumber into 4-5 lengths of about 3cm, remove core by cutting the small lengths into halves or quarter. Cut into less than one cm thickness. Place cucumber in bowl and rub in 1 tablespoon of salt. Leave aside for 30 mins). After 30 minutes, throw away water that is in salted cucumber container. Quick wash the cucumber with clean water and squeeze water out from the cucumber. Oven dry the cucumber on a tray in 50-100 Celcius oven for about 15 mins, to futher dry the cucumber.

Boil a pot of water, add 2 tablespoon of vinegar and blench the carrots, long beans and cabbage. Dry carrots, cucumbers, cabbage and long beans on a paper towel.

Cooking Method

Cook the chilli paste with 2-3 tbsp of oil until fragrant. Add 1-2 cups water to the chilli paste and some vinegar.

Cook to boil and add 1 tablespoon sugar. Add all the vegetables, stir well into the chilli paste and salt to taste.

Mix in the crushed groundnuts (& sesame). Season with salt and sugar to taste. Remove from heat.

Serve or store in a bottle. If kept refrigerated freezed, it can be kept for up to one month.
